Turkey & Veggie Lettuce Wraps

Protein: ~30 g per 3 wraps
Ingredients:

  • 1 lb lean ground turkey

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp fresh grated ginger

  • 1 cup shredded carrots

  • ½ cup diced water chestnuts

  • 2 tbsp coconut aminos (or low-sodium soy sauce)

  • 8–10 butter lettuce leaves

Directions:

  1. Heat oil in a skillet. Add garlic & ginger; sauté 30 sec.

  2. Add turkey, cook until browned. Stir in carrots, chestnuts, and aminos; simmer 2 min.

  3. Spoon into lettuce leaves; serve warm.
