Sheet Pan Lemon Garlic Salmon & Green Beans
Fresh, light, and done in under 20 minutes.
Ingredients:
• 4 salmon fillets (4–6 oz each)
• 1 lb green beans, trimmed
• 2 tbsp olive oil
• 1 lemon, zest + juice
• 3 cloves garlic, minced
• Salt & pepper
• Optional: sprinkle of dill or parsley
Directions:
- Preheat oven to 425°F.
- Place salmon fillets in the center of a sheet pan; surround with green beans.
- Whisk olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
- Pour over salmon and beans.
- Bake 12–15 minutes, depending on thickness.
Optional add: Serve over cauliflower rice or quinoa for the family.
