Sheet Pan Lemon Garlic Salmon & Green Beans

Fresh, light, and done in under 20 minutes.

Ingredients:
• 4 salmon fillets (4–6 oz each)
• 1 lb green beans, trimmed
• 2 tbsp olive oil
• 1 lemon, zest + juice
• 3 cloves garlic, minced
• Salt & pepper
• Optional: sprinkle of dill or parsley

Directions:

  1. Preheat oven to 425°F.
  2. Place salmon fillets in the center of a sheet pan; surround with green beans.
  3. Whisk olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
  4. Pour over salmon and beans.
  5. Bake 12–15 minutes, depending on thickness.
Optional add: Serve over cauliflower rice or quinoa for the family.
