One-Pan Chicken Sausage, Veggies & Potatoes

High-protein, colorful, hearty — a total crowd pleaser.

Ingredients:
• 1–1.5 lbs chicken or turkey sausage links (precooked)
• 1 lb baby potatoes, halved
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 red onion, sliced
• 1–2 zucchini, cut into half moons
• 2 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• Salt & pepper to taste

Directions:

  1. Preheat oven to 425°F.
  2. Spread potatoes on a sheet pan, drizzle with olive oil, salt, pepper; bake 10 minutes.
  3. Add all remaining veggies and sausage slices to the pan.
  4. Season with garlic powder and Italian seasoning.
  5. Toss and roast another 20–25 minutes, stirring halfway.
  6. Serve with a big green salad or steamed broccoli.
