Garlic Butter Shrimp with Zucchini Noodles

Ingredients

  • 1 ½ lbs large shrimp, peeled & deveined

  • 4 medium zucchini, spiralized into noodles

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1 lemon (zest + juice)

  • 2 tbsp fresh parsley, chopped

  • Salt & pepper to taste

Instructions

  1. Heat butter in a skillet over medium heat. Add garlic and sauté 1 minute.

  2. Add shrimp, cook 2–3 minutes per side until pink. Remove from pan.

  3. Toss zucchini noodles in the pan for 2–3 minutes until just tender.

  4. Return shrimp, squeeze in lemon juice, and sprinkle with zest and parsley.

  5. Serve hot.
