One-Pan Chicken Taco Bowls

Protein: ~40g per serving
Ingredients

1½ lbs chicken breast, diced

1 Tbsp olive oil

1 packet taco seasoning (or DIY)

1 can black beans, drained

1 cup corn (optional)

Cooked rice or cauliflower rice

Toppings: cheese, avocado, salsa, Greek yogurt or sour cream
Instructions

Heat oil in large skillet over medium-high heat.

Cook chicken until no longer pink.

Add taco seasoning, beans, and corn. Cook 5–7 min.

Serve over rice and let everyone add toppings.
Shortcut:
Use rotisserie chicken and just warm everything together.
