High-Protein Veggie Pasta (Edamame or Lentil Pasta)

Ingredients:

  • 8 oz edamame or lentil pasta

  • 1 cup cherry tomatoes, halved

  • 1 zucchini, diced or spiralized

  • 1 cup spinach

  • 2 tbsp pesto (or olive oil + garlic)

  • 2 tbsp hemp seeds or parmesan

Directions:

  1. Cook pasta per package; drain.

  2. Sauté zucchini, spinach, and tomatoes 3–4 min.

  3. Toss with pasta + pesto; sprinkle hemp seeds/parmesan.
