Ingredients:

8 oz edamame or lentil pasta

1 cup cherry tomatoes, halved

1 zucchini, diced or spiralized

1 cup spinach

2 tbsp pesto (or olive oil + garlic)

2 tbsp hemp seeds or parmesan
Directions:

Cook pasta per package; drain.

Sauté zucchini, spinach, and tomatoes 3–4 min.

Toss with pasta + pesto; sprinkle hemp seeds/parmesan.
