Almond Joy Protein Bites

Yield: 5 servings (3 bites per serving)

Ingredients: 

  • 1/2 cup almond butter (or nut/seed butter of choice)
  • 4 servings (136 grams)
  • 1/8 cup chopped almonds (or nut of choice)
  • 2 T flaked or shredded unsweetened coconut
  • 2 tsp cacao powder
  • 1 tsp almond extract
  • 4-6 T unsweetened almond milk* (or milk of choice, or water)
  • 2 T honey (optional)
  • Topping: 2 tsp coconut flour or coconut flakes

Directions:

  1. Combine nut butter, protein powder, almonds, coconut, cacao powder and almond extract in a mixing bowl, and mix well.
  2. Add almond milk or other liquid and combine. Continue to add liquid* until batter becomes sticky enough to form balls.
  3. Roll into 15 or so even sized balls. Roll in coconut topping and store in the refrigerator in an airtight container.
