Amie Method Recipe: Taco Breakfast Bowl

I’m a big fan of thinking differently about breakfast.

Sometimes the easiest way to get enough protein and steady energy in the morning is to stop thinking of breakfast as “breakfast food.”

When we shift our mindset, new options open up — and meals like this become simple, satisfying, and incredibly supportive for metabolism and energy throughout the day.

Here’s one of my favorites.

Taco Breakfast Bowl
Serves 4 | Ready in about 30 minutes

Ingredients

1½ tsp extra-virgin olive oil
1 lb extra-lean ground turkey
2 tbsp chili powder
1 tsp oregano
1 tsp cumin
1 tsp black pepper
1 tsp sea salt
½ cup water
4 eggs
4 cups chopped baby spinach
1 green bell pepper, diced
1 tomato, diced
1 avocado, mashed

Instructions

Heat olive oil in a skillet over medium heat.

Add ground turkey and cook until browned, breaking it apart as it cooks.

Add chili powder, oregano, cumin, black pepper, salt, and water. Stir well and let simmer until the liquid is absorbed.

Fry eggs separately.

Divide spinach between bowls and top with bell pepper, tomato, avocado, taco meat, and egg.

Serve warm and enjoy.
