One-Pan Chicken Taco Bowls

Protein: ~40g per serving

Ingredients

  • 1½ lbs chicken breast, diced

  • 1 Tbsp olive oil

  • 1 packet taco seasoning (or DIY)

  • 1 can black beans, drained

  • 1 cup corn (optional)

  • Cooked rice or cauliflower rice

  • Toppings: cheese, avocado, salsa, Greek yogurt or sour cream

Instructions

  1. Heat oil in large skillet over medium-high heat.

  2. Cook chicken until no longer pink.

  3. Add taco seasoning, beans, and corn. Cook 5–7 min.

  4. Serve over rice and let everyone add toppings.

Shortcut:
Use rotisserie chicken and just warm everything together.
