Tempeh & Lentil Power Salad

You’ll need: measuring cups and spoons, cutting board and knife, baking sheet, parchment paper (optional), medium mixing bowl

Ingredients:

  • 1 Tablespoon olive oil
  • 12 oz tempeh, cut into ½-inch cubes
  • 1 teaspoon salt, divided
  • ¼ teaspoon pepper
  • 1 (15-oz) can lentils, drained and rinsed
  • 1 cup cherry tomatoes, sliced
  • 1 medium red onion, diced
  • 1 cup parsley, chopped (about one large bunch)
  • 1 Tablespoon lemon juice
  • 1 cup plain nonfat Greek yogurt

Directions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, toss the cubed tempeh with olive oil, ½ teaspoon salt, and the pepper.
  3. Spread the tempeh evenly on the baking sheet. Bake 30–35 minutes, flipping halfway, until golden.
  4. While it bakes, mix the lentils, tomatoes, parsley, red onion, lemon juice, and remaining ½ teaspoon salt in a medium bowl.
  5. Let the tempeh cool slightly, then fold it into the lentil mixture.
  6. Divide into 4 portions and top each with ¼ cup Greek yogurt.

Make it yours:

  • If dairy doesn’t sit well with your body, swap the Greek yogurt for an unsweetened plant-based version — just know the protein total will shift, so you may want to add a boiled egg or extra tempeh alongside.
  • Want more protein? Bump the yogurt to ⅓ cup per serving or add a sprinkle of hemp seeds.
  • Not a parsley person? Cilantro, fresh dill, or baby arugula all work beautifully here.
  • Make a double batch of the tempeh — it’s a perfect grab-and-go protein for the rest of the week.
