Berry Baked Oatmeal

This is one of those breakfasts that does the work for you — bake it once, and you’ve got warm, satisfying mornings ready to go all week. Golden on the outside, soft in the middle, and loaded with sweet berries. Below, you’ll also find a few simple ways to boost the protein even further if you want this to carry you longer into the morning.

Ingredients

Dry ingredients:

  • 2 cups old-fashioned rolled oats
  • ¾ cup sliced almonds
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ½ tsp kosher salt

Wet ingredients:

  • 1¾ cups milk (dairy or dairy-free)
  • ¼ cup honey or maple syrup
  • 2 large eggs
  • 2 tbsp melted unsalted butter or coconut oil
  • 2 tsp vanilla extract

Add-in:

  • 2½ cups frozen mixed berries

Instructions

  1. Preheat. Preheat the oven to 375°F. Grease a 9-inch square baking dish.
  2. Mix the dry ingredients. In a large bowl, stir together the oats, ½ cup of the almonds, cinnamon, baking soda, and salt.
  3. Whisk the wet ingredients. In a separate bowl, whisk together the milk, honey, eggs, butter, and vanilla.
  4. Combine and bake. Pour the wet mixture into the dry, add the frozen berries, and stir together. Transfer to the baking dish, top with a few extra berries if you like, and sprinkle the remaining ¼ cup of almonds on top.
  5. Bake. Bake for 40 to 45 minutes, or until set. Serve warm, plain or with a dollop of yogurt or a drizzle of maple syrup.

Boost the Protein

This one’s easy to build up if you want it to hold you over longer. A few ways to do it:

  • Stir 2 scoops of unflavored or vanilla protein powder into the wet mixture before combining.
  • Add 3 extra egg whites along with the whole eggs — barely changes the texture, adds real protein.
  • Top each serving with a dollop of plain Greek yogurt, which also keeps it nice and creamy.
  • Swap the milk for an equal amount of high-protein milk if you have access to it.

Any one of these on its own can add roughly 10–20g of protein per serving — combine two if you want to go even further.

Coach’s Tip

Bake this on a Sunday and you’ve got breakfast handled through Wednesday or Thursday. Portion it into containers as soon as it cools, and just reheat in the morning. It’s the kind of thing that makes eating well on a busy week feel automatic instead of like one more thing to figure out.
