Amie Method High-Protein Chicken Skillet
This one’s a go-to on busy weeknights — ready in about 25 minutes, built on lean protein and real vegetables, and flexible enough to work with whatever you have on hand.
Yield: 4 servings | Prep: 10 min | Cook: 15 min
Ingredients
- 1 lb chicken breast, diced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup low-sodium chicken broth
- 1 tablespoon soy sauce (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced chicken breast, season with paprika, salt, and pepper, and cook 5-7 minutes, turning occasionally, until golden and cooked through.
- Add the minced garlic and stir for about 1 minute, just until fragrant.
- Add the mixed vegetables and chicken broth (plus soy sauce, if using). Stir to combine, then cover.
- Simmer 10-12 minutes, until the vegetables are tender and the chicken is fully cooked.
- Serve hot with rice, quinoa, a side salad, or warm bread.
Chicken Tips
Boneless, skinless chicken breast is the leanest option here — look for firm, pink pieces with no discoloration. If you have a few extra minutes, a quick marinade of lemon juice, olive oil, and herbs adds a lot of flavor for very little effort. Prefer a richer taste? Chicken thighs work well too, just know they carry a bit more fat.
Substitution Ideas
- Turkey breast in place of chicken for an even leaner option
- Frozen mixed vegetables to cut down on prep time
- Avocado oil instead of olive oil for a different flavor note
- Low-sodium vegetable broth in place of chicken broth
- Garlic powder if you’re out of fresh garlic
- A dash of cumin or Italian seasoning for a different flavor direction
Common Mistakes to Avoid
The biggest one is overcooking the chicken — once it’s cooked through and no longer pink, it’s done; any longer and it dries out. The second is under-seasoning, so don’t be shy with the paprika, salt, and pepper up front. And timing matters with the garlic: add it too early and it burns, turning bitter instead of fragrant — it goes in right before the vegetables.
Storage
- Refrigerator: Up to 4 days in an airtight container
- Freezer: Up to 3 months in a freezer-safe container or bag
- Reheat: Stovetop over medium-low until warmed through, or microwave covered for 1-2 minutes, checking as you go
Strong feels good.
