Apple pie parfait
It’s the PERFECT fall healthy dessert or sweet afternoon snack. Here’s how to make it:
•1/2 apple, diced
•spritz of lemon juice + a sprinkle of cinnamon
•1 cup cottage cheese (I use Good Culture because of its thickness. You’ll want to avoid a liquidy cottage cheese)
•1 pitted medjool date
•1/2 scoop vanilla protein powder
•1/4 tsp cinnamon
•3 Simple Mills honey cinnamon sweet thin crackers
Add the chopped apples to a pan and add the lemon juice and cinnamon. Sauté until apples have softened a bit. This should only take a few minutes.
Next, combine the cottage these, date (if you keep dates on the fridge, make sure it’s softened/room temp), protein powder, and cinnamon. Blend well then fold in the cooked and cooled diced apples.
Add to a mason jar or bowl then crumble the cinnamon crackers on top.
Serve immediately or you can refrigerate for later. This should keep for 3-4 days.
