Louise’s Spicy Shrimp

Cook Time: 10 min

 

Ingredients:

1 Tbs olive oil

1 cup chopped yellow pepper

1 Tbs. jalapeno pepper

1 ½ lbs peeled and deveined shrimp

1 Tbs lime juice

14.5 ounces canned diced tomatoes (drained)

Salt and Pepper

Rice or Cauliflower rice

 

  1. Cook rice however you choose.
  2. Heat oil and add peppers. Sauté 4 min. Add salt and pepper, red pepper, and shrimp. Cook 2 min.
  3. Stir in juice and tomatoes.
  4. Cook until thoroughly heated.
  5. Serve over rice.
